So, how does this whole selling gold work?

You should go to more than one pawn shops and ask how much they’d give you for the gold so you don’t get ripped off. But if you look 14, maybe it’ll be better if you go with an adult.

They will look at your jewelry and estimate the gold content. Then they will offer you money, based on the gold content of your jewelry. Note that they are in business to make a profit, so they will not offer you top dollar or "spot" prices. Then again, neither will a pawn shop.
